Good cheer is an ingredient that is abundantly available and so important for making delicious Christmas dinners. Sage Appliances collaborated with some amazing celebrity chefs such as Jean Barbour, Bilal Saleh, Mrs. Noon and Alexandros Sperxos to create a magical Christmas dinner.
Some of the dishes they prepared were Carrot Soup, Scallops, Smoked Salmon Ceviche, Risotto Balls, Christmas Turkey, Crusted Feta, Christmas biscuits and other amazing dishes! These delectable dishes were created with the help of Sage Fast Slow Pro (Cooker), the Bakery Boss (Mixer), the Kitchen Wizz Peel & Dice (Food Processor), the Smart Oven Air Fryer, the Smoking Gun, and other Sage appliances for a delicious dinner hosted at the Culinary Boutique Cooking School.

Here are some recipe tips from celebrity chefs on how to prepare your masterpiece dishes at home:
Chef Bilal Saleh’s Carrot Soup Recipe
Ingredients:
8 pc carrots, 1pc onion, 0.5 pc celery, 1.5L chicken stock, 1pc potato, 2tbsp butter, 2tbsp pumpkin seeds, salt & white pepper.
Method:
Dice the onions, celery & carrots using the Sage Kitchen Wizz Peel & Dice for precise cut leads and textures. Cook the onion, celery, and carrots along with the potato and butter into the Sage Fast Slow Pro. Add the chicken stock. Close the lid and cook in soup mode.
Brush the pumpkin seeds with butter. Add salt, then roast in the Smart Oven Air Fryer.
Once the soup is cooked, add salt and pepper. Serve it topped with pumpkin seeds and a splash of fresh cream.
Chef Jean Barbour’s Risotto Balls Recipe
Ingredients:
100g red onion, 15g garlic, 2pc Portobello mushroom, 1L fresh cream, 1.5L vegetable stock, 300g parmesan cheese, salt & black pepper. For coating: 2 eggs, 200g flour, 400g panko breadcrumbs, 1kg Arborio rice
Method:
Heat some olive oil and add onions until it transform into golden color. Add garlic and Portobello mushrooms and stir. Add the arborio rice, vegetable stock and cream. Let the rice cook using Sage Fast Slow pro cooker and add the parmesan cheese. Let this sit in the fridge for 2 hours. Roll a small amount of the rice into a ball and coat with flour first, then eggs and panko breadcrumbs. Repeat with the rest of the risotto.
After the risotto balls are ready, you can cook them in the Smart Fryer from Sage for a super crispy finish.
Chef Alexandros Sperxos’s Triangle Crusted Feta with Almond Recipe
Ingredients:
90g feta cheese, 1pc egg, 30g flour, 20g breadcrumbs, 50g almond flakes, 100ml pomegranate juice, 50g honey, olive oil.
Method:
Cut the feta into triangles and dice the almond flakes with the Sage Kitchen Wizz Peel & Dice processor. Put the feta in water, then into the egg, flour, and breadcrumbs followed by the almond flakes. Keep in the freezer for some time. Pour the pomegranate juice into a saucepan. Heat over a slow flame, and then add the honey. Fry the feta using the Smart Fryer from Sage. Pour the pomegranate syrup over the top for a delicious finish.
Mrs. Noon’s Christmas Turkey Recipe:
Ingredients:
1 Turkey, 20pc garlic, lemon, 12pc thyme, 12 rosemary stalks, 14g bay leaves, 1pc onion, 1 bottle olive oil, 1kg potatoes, 1kg carrots, 3pc (500g) butter, salt, pepper, garlic powder, onion powder, chilli flakes, and paprika powder.
Method:
Mix the butter, rosemary, thyme, olive oil, zest lemon juice, and chopped parsley garlic paste together using the Sage Bakery Boss mixer. Chop the onion, garlic, lemon, potatoes, and carrots using the Sage Kitchen Wizz Peel & Dice. Loosen the skin from the turkey meat. Place the flavored butter & vegetables inside. On the baking tray add bay leaves, thyme, rosemary, onion, garlic, and butter and place the turkey on top. Put the turkey in the Sage Smart Oven. Brush it with flavored butter every 30 minutes. Place the carrots, onions and garlic around the Turkey in the last hour before removing it from the oven.
Chef Alexandros Sperxos’s Melomakarona Biscuits Recipe
Ingredients:
240g sunflower oil, 240g olive oil, 900g plain flour, 1.5 tbsp ground cinnamon, 2 tbsp baking powder, 1pc orange zest, 200g caster sugar, 160g orange juice, 1 tbsp bicarbonate of soda, 75g walnuts.
Method:
Pour both oils into the Sage Bakery Boss Mixer on slow speed. Add flour followed by cinnamon, baking powder, orange zest, sugar, orange juice and bicarbonate soda. Mix the ingredients until they form a dough. Divide the dough into 10g portions. Form them into biscuits, placing them onto buttered baking paper. Press them lightly with a fork and bake them with the Smart Oven from Sage.
